Ingredients:

1½ Tbs. olive oil
1 cup chopped onion
½ cup chopped carrot (small pieces)
½ cup thinly sliced celery
1 Tbs. minced fresh garlic
½ tsp. freshly ground black pepper (or more to taste)
¼ tsp. salt (or more to taste)
1 fresh thyme sprig
4 cups lower-sodium chicken broth (add 1 cup or more if you want thinner soup)
